vegan cupcake recipe:
So many people ask vegans how do we eat
sweets if almost everything contains milk and or eggs. Well for this recipe you
don't need any animal products. This is a delicious vegan cupcake recipe. For
this you will need:
1 tablespoon apple cider vinegar
1
1/2 cups almond milk
2
cups all-purpose flour
1
cup white sugar
1/2 teaspoon
baking soda
1/2 teaspoon salt
1/2 cup coconut
oil, warmed until liquid
1
1/4 teaspoons vanilla extract
Preheat oven to 350 degrees F. Grease the muffin pans or line with paper baking cups.
Measure the apple cider
vinegar into a 2 cup measuring cup. Fill with almond milk to make 1 1/2 cups.
Let it sit so its a substitute for egg for about 5 minutes. In a bowl
whisk together the flour, sugar, baking powder, baking soda and salt. In a
separate bowl, whisk together the almond milk mixture, coconut oil and vanilla.
Pour the wet ingredients into the dry ingredients and mix them together.
Put the batter into the muffin
pan. Bake in the oven for about 15-20 minutes. You can put a toothpick in
it and if it comes out clean its ready, if the batter sticks to it leave it in
for a little longer.
